Chocolate Chip Cookies

These Paleo-friendly chocolate chip cookies are made with simple, whole-food ingredients that satisfy your sweet tooth without the crash. By using nutrient-dense flours, natural sweeteners with a lower glycemic impact, and healthy fats that slow glucose absorption, this recipe gives you all the flavor of a classic cookie, minus the spike.
Ingredients:
1 ¾ cups almond flour
½ tsp baking soda
¼ tsp salt
1 egg
⅓ cup coconut sugar (or maple syrup)
3 tbsp coconut oil, melted (or olive oil)
1 ½ tsp vanilla extract
½ cup Hu chocolate chips
Instructions:
Warm the almond milk gently over medium heat.
Whisk in cacao powder, cinnamon, sea salt, and vanilla until smooth.
Remove from heat and stir in raw honey or coconut sugar to sweeten naturally.
Add cayenne pepper if you want a spicy kick.
Pour into a mug and savor slowly.
